Hello,
How can I remove read more button from portfolio items displayed in a grid ?
You’ll find an option that allows you to hide this from your Theme Options page. Appearance > Theme Options > Content > Post Grids > Show buttons?
How can I set up so I don’t have to upload a different image as featured item in portfolio when displaying youtube videos and how can youtube thumb nail can be used automatically as featured item?
The theme doesn’t have any kind of feature for this. You’d need to either come up with a custom solution or possibly find a plugin out there that does it.
Maybe something like this:

And an alternative approach is to actually embed the videos directly in the post grid, opposed to technically using the featured image at all:

Are you sure you’re not mixing up things here? Maybe you could provide a live link to where you’re trying to hide this button, and I could give you some more specific details.

Just for future reference, what you’re describing would be considered a “post list” and this would be an example of a post grid.
So, with post lists there is no option to hide this button, unfortunately, because it works a little bit differently than a post grid. If you wanted to setup a child theme, this would be a fairly easy customization. — You’d just copy content-list.php from the theme to your Child theme, and then you’d replace
